The chemical processes that the grape undergoes from its harvest to its transformation into wine, and the intervention in the process, is what marks the personality of a wine.
After the harvest and production of a wine, there is an essential phase: storage. in the bottle, and it is nothing more than the time that the wine is stored in this container that gives it colour, aroma and flavour, preventing oxidation and helping the maturation of the tannins.
The oxidative phase in the barrel gives the wine greater complexity and structure. in its flavours and aromas, then it must go through bottle storage, a reduction phase that helps integrate the wood into the wine, and balances it.
In the bottle, a reduction process takes place over several months, with a minimum contribution of oxygen that can enter through the cork, since it is not completely impermeable.
Tannins, anthocyanins, various types of alcohols, acids, esters, polyphenols, oxygen … are the protagonists of all the modifications that occur in the wine once it has been bottled. In this reducing environment, esterifications, condensations and polymerizations occur as a result of complex chemical reactions. A marvel of molecular transformation, which modifies the wine.
Once bottled, and as a result of all these chemical processes, the wine is refined, changes color, becomes more rounded in the mouth and acquires greater complexity of aromas and flavors.

All these processes that the wine undergoes during its maturation and that complete the cycle that began in the vine, require a series of conditions. Environmental conditions: very little light, a temperature between 12 and 15 degrees and a high percentage of humidity.
